Every two weeks we gather for a Sanctuary family potluck meal. It’s always a sweet time to share homegrown, homemade, nutrient-rich, and lovingly-made food and connect in a non-work, relaxed environment. This past week we (staff, interns, and visitors) sat around the table under the apple tree and feasted on various veggie dishes from the garden, pickled radishes from the garden, a three-year old bottle of homemade ginger champagne, and for dessert, a scrumptious sweet potato cacao pie made by intern TJ. It’s so easy!
• 1 cup cooked & mashed sweet potatoes
• 1/2 cup smooth nut butter
• 1/4 cup raw cacao powder
• 2 Tbsp pure maple syrup
• 1/4 cup coconut oil
Mix all ingredients and pour into a pie pan. Bake at 350 for 20 minutes.
