After a week at Ashevillage’s Resilient Living Workshop, I am a changed person. Having been a New Yorker for the past 16 years, I came in with very little knowledge about the field of permaculture, much less any knowledge about growing my own vegetables or living anywhere other than in the thickest of grids. I have been incorporating fermentation in everything. Just made yogurt cheese to be ready for Friday night’s book club dinner at our house. Everyday I make a new type of dish with some fermentation type of process. I ate a radish salad tonight that I never would have made if not for the class.
